there fairly easy you need to run power to the switch and from the switch to the fan . the switch will probably need earthing and so will the fans which can be done via body work and you should run a relay in there some where also if you buy new switch and relay they have instructions on them for wiring usually
I used to have 2 10" fans with switches fitted in my shifter housing(B&M) hardest part of the job was fitting the fans

you can do it either way but bear in mind that you will want a fuse on it just to make sure so it wouls be easier to go from the fuse box and probably less distance to run the wires

Davies Craig do a switch like dyno is talking about a thematic switch it has a temp dongle you just stick in your top hose to tell it when to turn on it also has a dial you can adjust it so it kicks on at a lower temp there about $70 but a reliable unit there at Supercheap has wiring instructions to me thinks. Im not sure about other cars but generally when i wire stuff up i use a relay too. good luck

you can get the same switch added into the top of the radiator via a good radiator specialist it's heaps neater and don't have the extra worry of the hose leaking around it
